Anniversary weekend

Hi everyone:)
Just had a little confession...I was naughty this weekend. Kev and I went up to San Juan Island for our 2 year anniversary! I have to say that I didn't count my points...but I did make healthier choices. I almost always order seafood fettuccine...and I DIDN'T this time! I have to tell everyone this, because I usually take any opportunity to order this for dinner...instead I ordered the mango/chutney Halibut w/ red potatoes and fresh green beans on the side. I did eat the whole thing, which I should have saved some to-go...but it was amazing. Instead of ordering my own dessert, Kev and I shared:) We stayed at a B&B, so the breakfast was amazing, although I wasn't able to order anything specific, SO...I only ate one of the stuffed pieces of french toast w/ berries and let the other one go back to the kitchen..... that was HARD, but I did it!
I did have a lemon drop with dinner, which I'm sure was loaded w/ sugar...but it was yummy, and it came as a double, so I kind of got 2 for 1 drink? What have you guys been doing for alcohol and dinner. I know its best to just not have it, but what are some good drink ideas? My girlfriend just taught me about Fresca and vodka...it's super yummy and way low in cals!
SO...I want to hear how everyone is doing??? I'm back on track today:) I just signed up officially this weekend, so I'll have a # to report around Sunday for pounds lost!
I hope everyone has an amazing on-track week!!!
p/s/ I have Kev's high school reunion this weekend...I'll need some pointers for that!

Hello!

Hello Friends!

Just wanted to check in since it's been a while... thanks for the update Beth on your goals I know you will do great and will have the cutest baby in Washington... ;)

Since I have started I have lost 5.6 lbs and I'm feeling great! My weigh-in's are on Wednesdays so I'll be sure to keep you all posted on how things go! It's hard for me to see my ultimate goal (to lose 60lbs...yikes) as obtainable... so I prefer to go in 5lb increments! For me it's the little successes that make a difference!

If you haven't picked it up already... the Healthy Cooking cookbook from WeightWatchers is AWESOME! Franky loves most of what I have cooked already and he doesn't even know it's good for him! Ill try and post the chicken pot pie recipe soon! I made it more simple (thanks to beth's ideas) and it only took me 30 min to cook!!!

I guess I was too excited about the watermelon to mention to you my goals. My goal is to lose 20lbs by my birthday 10/27.
So when attending my WW meeting they mentioned that frozen watermelon was a good snack. I thought this was very weird but I tried it and I Love It!!! It tastes just like a popsicle and you get a fruit serving. I just cut the watermelon into wedges and put wax paper between them and its a great summer snack. :)
This may sound weird but do any of you have any great ideas for crab meat. I love this stuff but the only ways I know to use it would not follow ww. I went to costco and got a huge amount and you can only eat crab cakes so many times :)

yummy recipe

Crustless Punkin PieIngredients
1 can pumpkin (15 oz)
1 can evaporated skim milk (12 oz)
3/4 cup egg substitute (or 3 egg whites)
1/2 tsp salt
3 tsp pumpkin pie spice
1 tsp vanilla
2/3 C. Splenda (or sugar) or to taste
Instructions:
Combine all ingredients and beat until smooth.Pour into a 9" sprayed pie panBake at 400 for 15 minutes, and then at 325 for 45 minutes or until a knife inserted in center comes out clean.
Serves 8Whole Pie: 8 points (or ONE pt. for 1/8 pie)
TIP! Top this pie with a little fat free Cool-Whip for even more of a treat! Counts as a vegetable serving and high in fiber!

My goals...attempt #2!

Okay... I have never done this blogging before, so bare with me!
First of all, I made my profile pic my super sexy bikini goal pic...I would love to get back into being super confident in skimpy clothes:)
So, why am I doing this...well as you all know my goal is to get pregnant within the next year!!!! Awesome...BUT...I would like to get back down to a nice pre-baby weight before I enter the world of pregnancy- this is exactly why I am here. I am about to embark on a journey that is going to be crazy and hormonal and totally new for me, so I figure I should get my health into check so that life will be easier and more comfortable! My goal is to check in atleast once a week to let everyone know how I'm doing...If you don't hear from me...make it a point to call/text/email/harasse me and see how I'm doing.
Tonight I had the lettuce wraps from Costco...they were yummy and filling- you fill up a piece of iceburg lettuce with meat and rice chips and soy sauce..you can have 4 wraps for 6 points and I felt like all my food groups were met with this:)
SO....let the blogging begin!!!
